Gluten Free Coca-Cola cupcakes are very easy and simple recipe that even the beginner baker can make, and it comes together quite quickly so it’s a great treat to take to parties or potlucks.
And the best part? They are gluten free. The next best part? No one will ever know! No gritty texture or funky aftertaste-these are light, moist, and delicious down to the last bite.
WHAT INGREDIENTS DO I NEED TO MAKE GLUTEN FREE COCA COLA CUPCAKES?
- butter
- cocoa powder
- Coca Cola (I used Cherry)
- gluten free flour (see notes)
- sugar
- salt
- baking soda
- cinnamon
- buttermilk
- eggs
- vanilla
- FOR THE GLAZE
- butter
- cocoa powder
- Coca-Cola (again, I used Cherry)
- powdered sugar
HOW DO YOU MAKE COCA COLA CUPCAKES?
- Preheat oven
- Grease 13×9″ cake pan or line 24 muffin cups. I only use parchment liners, as they never stick!
- Whisk together gluten free flour, sugar, salt, baking soda and cinnamon in a medium bowl and set aside.
- Combine the butter, cocoa powder, Coca-Cola, and buttermilk in a small saucepan and bring to a boil over medium-high heat, stirring occasionally to prevent cocoa from scorching.
- Once Coca-Cola mixture starts to boil, pour it into flour mixture.
- Add eggs and vanilla and whisk until combined.
- Spread batter into prepared pan(s). This recipe will make a 13×9″ pan or 2 dozen cupcakes.
- Bake. Watch them carefully so as not to overbake them.
- Set pan on cooling rack for five minutes, then start the glaze.
- FOR THE GLAZE: combine butter, cocoa, and Coca-Cola in a saucepan. Stir to combine and bring to boil over medium-high heat. Remove from heat and whisk in powdered sugar.
- Drizzle the glaze over the cake or cupcakes.
- Store leftovers in an airtight container on the counter for 3-4 days if they last that long! In my opinion, these taste even better after sitting for a bit.
WHAT GLUTEN FREE FLOUR SHOULD I USE?
Bob’s Red Mill 1:1 works well in this recipe. I have also tested it with my flour mix recipe, and Better Batter would probably work as well.
Starchier blends like gfJules and Cup4Cup are not recommended.

Can I use diet Coca-Cola?
Yes, any type of Coca Cola will work. I’ve also made this recipe with Dr Pepper, but Cherry Coca-Cola is my fav!
I don’t have any buttermilk on hand, can I make my own?
Yes, you make your own by measuring 3/4 tsp lemon juice or vinegar into a liquid measuring cup, filling to the 1/4 cup mark, stirring, and letting it stand a few minutes until curdled.
What gluten free flour works best in this recipe?

- 1 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2/3 cup buttermilk
- 2 large eggs
- 2 teaspoon vanilla
FOR THE GLAZE
- 1/2 cup butter
- 1/4 cup cocoa powder
- 1/2 cup Coca-Cola (again, I used Cherry)
- 4 cups powdered sugar
Instructions
- Preheat oven to 350.
- Grease 13x9" cake pan or line 24 muffin cups.
- Combine the butter, cocoa powder, Coca-Cola, and buttermilk in a small saucepan and stir. Bring to boil over medium-high heat, stirring occasionally to prevent cocoa from scorching.
- Meanwhile whisk together gluten free flour, sugar, salt, baking soda and cinnamon in a medium bowl.
- Once Coca-Cola mixture starts to boil, pour it into flour mixture.
- Add eggs and vanilla and whisk until combined.
- Spread batter into prepared pan(s). This recipe will make a 13x9" pan or 2 dozen cupcakes.
- Bake for 25-30 minutes for cake pan, 12-20 minutes for cupcakes until a toothpick inserted in center comes out clean. Be careful not to over-bake.
- Set pan on cooling rack for five minutes, then start the glaze.
- FOR THE GLAZE: combine butter, cocoa, and Coca-Cola in a saucepan. Stir to combine and bring to boil over medium-high heat. Remove from heat and whisk in powdered sugar.
- Drizzle the glaze over the cake or cupcakes.

Another reason for me to head to the US and pick up a case of Cherry Coke. :) I've heard rumors that it's available at a few places in Canada, but haven't seen it yet. One of our favourites though. :)
