The holidays just wouldn’t be complete without pies, and if you’re tired of fussing over a pastry crust then gluten free ice cream pie is for you! Quick and easy to make ahead of time yet show-stoppingly beautiful, they’ll be a fan favorite at your next party.

Have you ever made an ice cream pie?? It’s a great quick-and-easy option that can be made ahead of time, and it’s a crowd pleaser to boot!

I hadn’t ever made one until my brother started serving them at our Thanksgiving get-togethers. While I’m a total sucker for a light and flaky pie crust (I’ve got a great gluten free pie crust recipe if you’re interested!), the ice cream pies with cookie crusts are a nice change from a traditional pie.

Of course, I made a gluten free version, which is super easy to do with a pre-made or homemade crust.

What I love about Gluten Free Ice Cream Pies:

  • You can make them ahead of time. Like, way ahead of time. Make a few the week before Thanksgiving and you’re all set for the big day!
  • They look fancy, but they’re super easy. And I love desserts that wow without much effort, don’t you?
  • They’re customizable (more on this below)

I have a few versions of gluten free ice cream pie below, but I also wanted to share the basics with you so that you can make whatever flavor you’d like.

HOW TO MAKE A GLUTEN FREE ICE CREAM PIE

Pick a theme

Chocolate peanut butter? White Chocolate Raspberry? Or how about Maple Pecan? Think of some of your favorite flavor combos and use that as a theme for your ultimate gluten free ice cream pie.

Pick a Crust

The Chocolate Peanut Butter Cup pie below features a homemade crust made from peanut butter Chex, while the other two use my favorite pre-made gluten free graham cracker crusts (one chocolate, one traditional graham).

A traditional pastry crust won’t work well for ice cream pies as it will be too hard once frozen, but feel free to experiment with different types of cookie crusts!

Choose an ice cream

There are so many options here! Go back to your theme and your crust, then pick something that complements those.

Make sure you’re using a safe ice cream by looking for a gluten free label and/or contacting the brand.

You can use a plain flavor and add in some goodies, or just use one that already has the add-ins. Example: Use a simple vanilla ice cream and add in raspberry jam + frozen raspberries, or grab a carton of Rocky Road with all the mix-ins already incorporated.

Don’t forget the toppings!

Toppings will add the finishing touch once the pie is being served. Include a variety bar-style for your guests to assemble their own show-stopping dessert! Here are some ideas:

  • whipped cream (Reddi-Whip or homemade)
  • chocolate sauce
  • caramel sauce
  • magic shell
  • fruit syrups
  • chocolate or white chocolate shavings
  • chopped nuts (peanuts, hazlenuts, pecans, walnuts, almonds)
  • mini marshmallows
  • chopped candies/chocolates
