We love fluffy biscuits at our house, and for years I tweaked recipe after recipe to find a gluten free alternative that didn't resemble hockey pucks.
Finally, I developed an unconventional gluten-free biscuit recipe that featured plain soda water and melted butter, and they were flaky and delicious. We enjoyed these gluten free baking powder biscuits for a few more years until I found the holy grail of all biscuits.
This one is based off a recipe for easy self-rising biscuits on the King Arthur Flour website. The recipe is unique in that you don't use any butter; instead, you use just flour, baking powder, salt, and cream.

And it. Is. Magic. These are THE best gluten-free biscuits that turn out perfect every time: light, flaky, tall, everything a biscuit should be. Everyone who tries them declares them the best biscuits they've ever had, even if they don't regularly eat gluten free!
Bonus: these gluten free biscuit recipes are ridiculously easy. Like, you almost feel embarrassed because of how easy they are.

Getting the Most of these Gluten Free Biscuit Recipes
- Use Cup4Cup gluten-free flour for fluffy gluten-free biscuits for best results. I've tested my recipes with every gluten-free flour blend and this one outperforms every time. It's also top 9 free now (it used to contain dairy) so you can use my dairy free modifications.
- Avoid twisting the biscuit cutter-press straight down, helping to maintain those fluffy layers.
- If you're short on time or want an extra simple recipe, you can make any of these recipes as drop biscuits.
- Almond flour does not work as a substitute for the gluten-free flour.
- When measuring flour, I always recommend using a kitchen scale instead of measuring cup. For Cup4Cup brand flour, 1 cup = 120 grams.
