A few weeks ago, I was craving chocolate cake. I know, it’s shocking. But seriously, all I wanted was chocolate cake (and maybe to binge watch my favorite show on Netflix, but that’s another story). The only problem is, life is crazy and moms don’t always have time to whip up chocolate cake, let alone wait for it to bake.
You alllll know what I’m talking about. When I’m not living out of my minivan, I’m tidying the house, Googling how to do 4th grade math, packing school lunches because school lunch isn’t something our kids can have, or reading One Fish Two Fish Red Fish Blue Fish for the 15th time that day. I love ALL of this, and at the same time it all makes me want to eat chocolate cake at 2 o’clock in the afternoon. 6 days a week.
Now at this point I do have to (embarrassingly) confess that I had not made a mug cake, let alone a gluten free mug cake. I realize I’m light years behind all of you but for some reason I just hadn’t tried it. If ever there was a time to try, though, THIS was it.
I looked at a few recipes online to get a general idea of the ingredients, wrote down what gluten free ingredients and amounts I thought would work, whipped it all up in my favorite mug, and 5 minutes later was enjoying a gluten free mug cake. Ahhhhh. As I sat relishing those 5 minutes of chocolatey goodness, I realized that Everyone needs a recipe like this in their arsenal!
Instant Chocolate Cake = Instant Happiness.
Because every Mom, Dad, Woman, Man, and Child needs chocolate cake that’s ready in 5 minutes flat, I incorporated ingredients that are free from the top 8 allergens. I used Ryze gluten free flour which is made from just rice flour so it has no starches, corn, nuts, xanthan or guar gum. And the texture is perfection. Not gummy or crumbly, and no funky aftertaste. Bob’s Red Mill 1:1 should also work well with this recipe and is widely available in grocery stores.
Make it a date night for Valentine’s Day and mix up a double batch of this Gluten Free Mug Cake, then enjoy over a candle-lit spread or a romantic movie. Spoil your kiddos by lining up the ingredients and letting them assemble, bake, and top their own. Or make a mug cake bar for your upcoming Galentine’s party complete with fun mugs and all the toppings your heart desires. There really is no wrong way to eat these single-serving cakes!
While this gluten free mug cake is great straight out of the mug, everything is better when it’s piled high with your favorite flavors! Try adding one or more of any of the following. My go-to is way too
much a light helping of whipped cream with a caramel drizzle and, of course, sprinkles. How will you top yours??
Topping options: (if you’re avoiding certain allergens, be sure to use allergen free versions or omit ingredients you can’t have.
Whipped cream (regular or a dairy free version)
Ice Cream (again, regular or dairy free)
Fresh Berries
Cacao Nibs, shaved chocolate, and/or Chocolate Chips
Caramel, Butterscotch, or Chocolate Sauce
A dollop of Nutella, PB, or Sunbutter
Sprinkles
Gluten Free Mug Cake

Ingredients
- 1/4 cup gluten free flour mix (I recommend Ryze yellow bag or Bob's Red Mill 1:1)
- 2 Tablespoons cocoa powder
- 1/4 teaspoon baking powder
- Dash or 2 of salt
- 2 Tablespoons sugar
- 1/4 cup milk (any kind will work)
- 1 Tablespoon neutral tasting oil (I used avocado)
- 1 egg, beaten OPTIONAL-you can leave this out to make the recipe allergen free/egg free
- 1/4 teaspoon vanilla (optional)
- 1 T chocolate chips (optional. If making dairy free, be sure to use dairy free such as Enjoy Life Foods)
Instructions
- In a 10 oz mug, stir together flour, cocoa, baking powder, sugar, and salt.
- Add remaining ingredients and stir until smooth.
- Microwave for 2 minutes on full power.
- Let cool for 1-2 minutes, top with your favorite toppings (if you want) and enjoy!
