We love biscuits at our house, and for years I tweaked recipe after recipe to find a gluten free alternative that didn’t resemble a hockey puck.
Finally, I developed an unconventional recipe that featured plain soda water and melted butter, and they were flaky and delicious. We enjoyed these gluten free baking powder biscuits for a few more years until I found the holy grail of all biscuits.
This one is based off a recipe for easy self-rising biscuits on the King Arthur Flour website. Since I knew that gluten free biscuits work better with a melted fat instead of the butter cut into the dry ingredients in most biscuit recipes, I set out to try it.
The recipe is unique in that you don’t use any butter; instead, you use just flour, baking powder, salt, and cream.
And it. Is. Magic. They turn out perfect every time: light, flaky, tall, everything a biscuit should be. Everyone who tries them declares them the best biscuits they’ve ever had, even if they don’t regularly eat gluten free!
Bonus: they’re ridiculously easy. Like, you almost feel embarrassed because of how easy they are.
Almost.
From there, I’ve gone on to develop some fun variations, and it has been fun to see what all of you like. The gluten free blueberry biscuits have been a reader favorite, and I love seeing them on breakfast tables around the world!
