Ingredients

  • 8 ounces yogurt of choice I like plain Greek yogurt
  • Sweetener of choice to taste (I use a little honey or stevia)
  • cup blueberries fresh or frozen
  • ¼ cup gluten free granola
  • 1 Tablespoon toasted coconut almonds, or pecans

Instructions

  • Stir together yogurt and sweetener.
  • Layer half the yogurt mixture, half the blueberries, half the granola, and half the toasted coconut in a parfait glass, regular glass, Mason jar, or bowl.
  • Top with remaining yogurt, blueberries, granola, and toasted coconut.
  • Serve.
  • If you're going to be serving later, you might want to keep the granola separate so it stays crisp.

Notes

There are lots of gluten free granola options! Be sure to find one that is certified gluten free as oats are often cross contaminated with wheat.
If you can't tolerate oats or are looking for a lower carb option, try a paleo or keto granola that is made with nuts and seeds.
You can find links to a few of my favorites below.
