Wonder Bread Chaffle Recipe

This keto wonder bread chaffle recipe has the soft texture of classic wonder bread! It is so quick and easy to make and is naturally gluten free and low carb. Make a big batch to freeze, or whip some up quick when you need a slice of bread.

Ingredients

  • 1 large egg
  • 1 tablespoon full-fat mayonnaise
  • 2 tablespoons almond flour
  • ¼ teaspoon baking powder
  • 1 teaspoon water
  • pinch of salt optional

Instructions

  • Whisk egg in a small bowl (medium bowl if doubling or tripling)
  • Add remaining ingredients and whisk just until smooth.
  • Pour about 3 tablespoons of batter onto a preheated Dash mini waffle maker and cook about 2 minutes, until it is the texture you want. Cook time will vary if you use a different waffle maker.
  • Store leftovers in an airtight container or Ziploc bag in the fridge for a day or two.
  • You can also store in the freezer for a few weeks. Put the wonder bread chaffles in a single layer on a baking sheet (if you need to do multiple layers, separate with parchment paper) and freeze. Once they are frozen, you can move to a freezer bag (be sure to push out any extra air)

Notes

  • Use full-fat mayonnaise for the best texture and taste, and to keep this recipe keto-friendly
  • Make sure your almond flour is gluten free. Some almond flours are cross contaminated.
  • Feel free to double or triple this recipe
  • This recipe works best in a Dash mini waffle iron.
  • If you would like to serve as traditional waffles, you can add 1 teaspoon of sweetener of your choice. Be sure the sweetener is a 1:1 sub for sugar.
