Gluten Free Halloween Brownies

Ingredients

GLUTEN-FREE BROWNIES

  • 6 oz semi-sweet chocolate chips
  • 3 tablespoons unsalted butter or coconut oil
  • 2 large eggs room temperature
  • cup granulated sugar
  • ¼ cup brown sugar or coconut sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon salt
  • 1 ½ teaspoons vanilla extract

  • Candy eyeballs see notes

Instructions

  • Prepare an 8" square baking pan by lining with parchment paper. To make this step easy, crinkle your parchment paper into a tight ball, then unfold.
  • Preheat oven to 350 F.
  • In a small saucepan, stir chocolate and butter or coconut oil over low heat just until melted and smooth. Set aside to cool.
  • In a large mixing bowl, combine eggs, sugar, and brown sugar or coconut sugar. Mix on medium-high 4-5 minutes until light and smooth. Mixture should be about double in size.
  • Mix in salt, vanilla, and chocolate mixture, scraping sides with a spatula as needed, until smooth and combined.
  • Add cocoa powder and mix until smooth.
  • Spread brownie batter into prepared pan.
  • Bake for 20-25 minutes until toothpick inserted comes out with fudgy crumbs. Be careful to not over-bake.
  • When brownies are done, gently press toppings onto the top to create a fun Halloween scene.
  • Allow brownies to cool before serving.

Notes

  • Always check your labels!
  • You can make the brownies from scratch with the provided recipe (they're delicious!) or use a gluten-free box mix. King Arthur's gluten free brownie mix is my personal fav and is linked below.
  • Reese's cups are gluten-free with the exception of seasonal shapes like ghosts, pumpkins, etc. Reese's Franken Cups are gluten-free and we used those to add a fun green hue to the top of the brownies.
  • For candy eyes, always check the labels! If you want to make your own, you can use this recipe for DIY edible googly eyes from A Saucy Kitchen. You can also use white chocolate chips with a dab of black icing.
  • You can use a hand mixer instead of a stand mixer.
