Meet the lunch of all lunches: a Gluten-Free Chopped Italian Sandwich! It's a fun twist on the classic Italian sub and SO good. With a mix of deli meats, pickled veggies, and a tasty herb dressing, it’s a simple yet delicious lunch option that’s sure to hit the spot.

Instructions
In order, layer shredded lettuce, ham, salami, pepperoni, cheese, tomato, banana peppers, and onion on a large cutting board.
Chop into small bite-sized pieces. The smaller the better for flavor distribution!
Drizzle on mayonnaise and Italian dressing and sprinkle with a little salt and pepper.
Depending on your preferences, you may want to add a little more mayo or dressing.
Scoop about ¼ of the mixture into a gluten free bun and serve immediately. I recommend serving with a freshly made gluten free hot dog bun, but if that’s not possible then warm a gluten free hoagie (Canyon Bakehouse is my fav) or hot dog bun in the microwave for 30-45 seconds and it will hold together better.
Notes
I used 2 Udi’s French Baguettes but honestly, wouldn’t recommend them. They were kinda big and thick and the texture wasn’t ideal. The best option would be to use my homemade hot dog buns, with the second best option being Canyon Bakehouse hoagie rolls.
If you’re feeding a crowd, you can easily double or triple this recipe but I would do it in batches because a single recipe fills up a cutting board and chopping more than that would be difficult.
No bun? No problem! You can add a little extra lettuce and serve as a salad, or as a dip with chips.
Make sure you check labels, some cold cut meats do contain gluten.
