Gluten Free Chocolate Waffles

- 3 eggs
- 1 ½ cups milk regular or dairy free
- 1 tablespoon vinegar
- ½ cup oil
- 2 teaspoons vanilla
- ½ cup cocoa powder
- 2 cup gluten free flour see notes
- ½ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoons salt
In a medium bowl, whisk eggs until smooth.
Add milk, vinegar, oil, and vanilla and whisk until fully combined.
Add cocoa powder, gluten free flour, sugar, baking powder, baking soda, and salt.
Whisk just until combined. There will be some lumps.
Preheat a waffle iron (I used a Dash mini waffle iron) and spray it lightly with oil or gluten free cooking spray.
Add waffle batter (¼ cup for the Dash mini waffle maker) and cook according to waffle iron instructions.
Top with whipped cream and berries, chocolate syrup, powdered sugar, nut butter, or vanilla ice cream.
