Ingredients

  • 3 eggs
  • 1 ½ cups milk regular or dairy free
  • 1 tablespoon vinegar
  • ½ cup oil
  • 2 teaspoons vanilla
  • ½ cup cocoa powder
  • 2 cup gluten free flour see notes
  • ½ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoons salt

Instructions

  • In a medium bowl, whisk eggs until smooth.
  • Add milk, vinegar, oil, and vanilla and whisk until fully combined.
  • Add cocoa powder, gluten free flour, sugar, baking powder, baking soda, and salt.
  • Whisk just until combined. There will be some lumps.
  • Preheat a waffle iron (I used a Dash mini waffle iron) and spray it lightly with oil or gluten free cooking spray.
  • Add waffle batter (¼ cup for the Dash mini waffle maker) and cook according to waffle iron instructions.
  • Top with whipped cream and berries, chocolate syrup, powdered sugar, nut butter, or vanilla ice cream.
