Instructions
Preheat waffle iron (more on which waffle iron works best below)
Whisk eggs in a small or medium bowl
Add finely shredded cheese
Whisk until well combined
Add 3-4 tablespoons chaffle batter to Dash mini waffle iron and cook for 2-3 minutes (3-4 minutes for a crispier exterior) ***You'll know the chaffles are ready when the waffle iron is no longer steaming and you can easily remove from the waffle iron.
Serve as is or with desired toppings (see notes)

CHEESE:For the best texture, use finely shredded cheese.I tested this recipe with a freshly grated block of cheese, and with pre-packaged finely shredded cheese and found that I preferred the texture of the chaffle made with the pre-packaged cheese. That being said, whichever you have on hand will work just fine.Mozzarella cheese has the most neutral flavor, so plan to use this one if you're going to enjoy your chaffles with syrup.Cheddar cheese is a popular option because it pairs well with eggs and most people have it on hand.Parmesan is a fun option; try adding some chopped pepperoni to your batter for a pizza flavor!Pepper jack cheese is a fun addition if you like a little spice.Feel free to use any combination of cheese that you prefer!WAYS TO SERVE:
Top with maple syrup (regular or sugar free)
Spread with guacamole or avocados and sprinkle with bagel seasoning
Make a pizza chaffle by spreading half the chaffle batter on the waffle iron, topping with a single layer of pepperoni, and spreading with the remaining half of batter before cooking. Serve with a side of marinara.
