I’m Celeste, the owner of Life After Wheat. I have always loved spending time in the kitchen, and over the past 8 years have been perfecting the art of gluten free baking and cooking.

When my husband was diagnosed with multiple food allergies, I was so disappointed by the options and didn’t want him to miss out. Although there are a lot more options now, I know that so many of you feel the same way and wish that you could enjoy your favorites again.

That’s why I created Life After Wheat, because I love helping people discover just how good gluten free food can taste by sharing my family’s favorite recipes and products!

After being GF for many years, why are you still buying flour blends and baked goods instead of making your own which, as is common accepted knowledge, homemade is better? That's the first thing I did upon being diagnosed. I have never bought anything I can make myself. I have great success with everything. My multigrain bread is awesome!

I want to try and make the dairy free optional GF rolls can I substitute flax seed for the egg and can I use almond milk instead of the powdered milk??

Great question Cherie! I like to test my recipes with a variety of gluten free flour options to make it easy for readers like you to make the recipes with whatever you might have on hand. I just stumbled on your blog through Pinterest and I'm so glad I did! I have been gluten free for 10 years now and am finally getting confident enough to try making bread so I'm excited to try your recipes! I was wondering if you've tried Carol's all purpose gluten free flour blend? I have been using it in other recipes for a few years now and I love it. I've noticed other bloggers saying no flour is an exact cup for cup substitute but (other than actual bread) I have not found a non gf recipe that hasn't been successful in a 1:1 substitution with that particular blend. My non celiac friends and family can't ever tell the difference.

Hello Amy! I am so happy you're here and have found a few recipes to try. I haven't heard of that flour blend, I'll have to keep my eye out for it. Thanks for sharing the info! My go-to for gluten free flour is Better Batter and it works similarly, I find I can use it in just about any recipe. Happy baking! -Celeste
