A simple Pistachio Salad recipe that is perfect for any occasion! Smooth, creamy, and easy to make, the green color makes this pistachio salad perfect for St. Patrick’s Day, Easter, and Christmas.

Pistachio salad was a regular at our holiday table when I was growing up. Its beautiful green color made it the perfect addition to our menu for Christmas, Easter, and St. Patrick’s Day, and I’m sure my mom loved how quick and easy it was to make!

Though many years have passed, Pistachio Salad is still a tradition at my parent’s home for the holidays, and it is now a regular at my family’s table, too.

The pretty green shade makes this salad perfect for fun holidays like St. Patrick’s Day. We also serve it for Christmas and Easter, and for Easter we like to add the pastel multi-colored marshmallows. The multi-colored marshmallow add some different fun flavors, as well that the kids really like!

Pistachio Salad

You can serve this Pistachio Salad as-is or dress it up by topping with a dollop of whipped cream, chopped pistachios, and a maraschino cherry on top.

Feel free to double or triple this recipe if you’re making it for a bigger crowd! It’s a fun side to take to parties and get togethers, and it’s always a big hit with adults and kids alike.

This pistachio salad is so easy to make, that my 5-year-old did it on her own just last week for our family night dessert. You just need a few minutes to mix it up, and a few minutes to let it set. It’s best if you have a few hours, but you can dig in after 20-30 minutes if you really have to 😉 I like to make it the day before for parties and get togethers so I don’t have to worry about it the day of. Just wait to add the toppings until you’re ready to serve.

Total Time: 25 minutes

Ingredients

  • 1 (3.4 oz) box of gluten free pistachio pudding
  • 1 1/2 cups milk (the higher the fat content, the creamier your salad. We like to use 2% or whole milk)
  • 2 cups Cool Whip (thawed)
  • 1 cup mini marshmallows (white or multi-colored)

Instructions

  1. In a large bowl, whisk pudding mix and milk according to package directions.
  2. Fold in cool whip and marshmallows.
  3. Cool in the fridge until set, about 20 minutes. You can make this easy salad the day before if you want.

We have not eaten this in years. Have you ever read the ingredients on a Cool Whip package? I don't call Cool Whip food, but a list of chemicals.
