Caprese Skewers are the ultimate appetizer! Reduced balsamic drizzled over fresh mozzarella, basil leaves, and sweet tomatoes…it’s sure to be a crowd pleaser.

Summer produce is in full swing here. Everyone’s gardens are overflowing and next year we have plans to be reaping the benefits in our own yard! Caprese has long been one of my favorite flavor combinations, which means these caprese skewers are one of my fav appetizers as well.

There's a new Caprese on the block! Olive oil infused with garlic and oregano, and drizzled over fresh mozzarella and tomatoes for the ultimate crowd pleaser!

Traditional caprese is a combination of sliced fresh mozzarella, tomatoes, basil, and balsamic vinegar. You may have seen this simple combo in the form of sandwiches, kebabs, or salads. Caprese is a popular dish, and for good reason!

You can make these caprese skewers the original way, or you can drizzle oregano and garlic infused olive oil over the tomatoes and mozzarella-the choice is yours!

 

 

All you need for these easy Caprese Skewers is:

  1. Grape or cherry tomatoes
  2. Fresh mozzerella
  3. Olive oil
  4. Oregano, garlic powder, and sea salt (I used Frontier Co-op) OR reduced balsamic, or balsamic glaze (I get it at Trader Joe’s)
Serve up that summer produce with oregano-infused olive oil!

Caprese Skewers

Yield: 15-20
Prep Time: 20 minutes
Total Time: 20 minutes

Caprese skewers can be made traditionally by layering fresh mozarella, basil leaves, and fresh tomatoes then finishing with a balsamic glaze. You can also make these as pictured, with a garlic and oregano-infused olive oil.

Ingredients

  • Grape or cherry tomatoes
  • 8 oz fresh mozzarella
  • toothpicks for serving

FOR OREGANO-INFUSED

  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 tsp dried oregano
  • 1/8 teaspoon garlic powder - or more to taste
  • 1/4 teaspoon sea salt

FOR BALSAMIC GLAZED

  • fresh basil leaves
  • balsamic glaze

Instructions

IF MAKING OREGANO INFUSED:

  1. Combine olive oil, oregano, garlic powder, and sea salt in a small mason jar or glass container and shake well to combine. Let sit at room temperature for a day or two to allow the flavors to meld.
  2. When the oil is ready, cut mozzarella into cubes about the same size as tomatoes.
  3. combine oil, cherry tomatoes, and mozzarella in a bowl and stir gently to coat.
  4. Serve in a serving dish or assemble with toothpicks or skewers for an appetizer.

IF MAKING BALSAMIC GLAZED:

    1. Combine cherry tomatoes, mozzarella, and about 2 tablespoons balsamic glaze in a bowl and stir gently to coat.
    2. Layer a wedge or ball of mozzarella, a basil leaf, and a tomato and pierce with a toothpick.
    3. Drizzle with more balsamic glaze.

If you have leftovers, store in the fridge and remove 30 minutes before serving again. Best served fresh.
