Happy New Year! Have you set some New Year Resolutions yet? I think it’s safe to say that most of us have some sort of goal to be a little healthier this year. Maybe that goal includes eating less sugar and more fruits and veggies.

Well, have you heard of Nice Cream? It’s an easy and healthy way to enjoy the creamy texture and sweet taste of ice cream, without all the junk. If you haven’t tried Nice Cream yet, you’ll surely be surprised at how creamy and, well, ice-cream-like it is!

The trick is blending frozen bananas and then adding other flavors to create fun combos. Enter: Pina Colada Nice Cream!

When I got my Blendtec blender, I couldn’t wait to come up with a fun Nice Cream flavor. You definitely need a powerful blender if you’re going to be blending frozen fruit into a thick ice cream, and the Blendtec Twister jar does a nice job. It took a few tries to get the flavor just right, and I think you’ll love it! Toasting the coconut before adding it to the blender really brings out the flavor.

You can snag the recipe and instructions on the Blendtec blog, where you’ll also find a kid-friendly idea for jazzing up the ice cream cones if you choose to serve it that way. Hope you enjoy it!

The only thing better than saying "nice cream" is eating nice cream! I just happen to adore the flavor of Pina Coladas so this is a major win for me - YUM!
